Ingredients
1 cup apple cider
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1/2 cup caramel sauce (for filling)
Instructions
1. Pour the apple cider into a saucepan and simmer over medium heat until reduced by half or more and thickened to a syrup-like consistency. Let it cool completely.
2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
3. In another bowl, beat the brown sugar, granulated sugar, oil, and egg until smooth. Stir in the vanilla and the cooled apple cider reduction.
4. Gradually mix the dry ingredients into the wet until a soft batter forms.
5. Scoop heaping tablespoons of batter onto a parchment-lined baking sheet, spacing them apart.
6. Bake at 350°F (175°C) for 10–12 minutes until puffed and set. Let cookies cool completely.
7. Once cooled, spread or pipe caramel sauce on the flat side of half the cookies.
8. Top with the remaining cookies to make sandwiches. Serve immediately or chill slightly to firm the caramel.
Notes
Let the reduced apple cider cool fully before mixing to avoid melting the sugar.
For cleaner sandwiches, pipe the caramel filling using a piping bag or plastic zip bag with the corner snipped.
If your caramel is too runny, chill it slightly before assembling.
