Ingredients
2.5 lbs beef chuck roast
2 tbsp flour
2 tbsp butter or oil
3 large onions, sliced
3 cloves garlic, minced
1 bottle Belgian dark beer (12 oz)
1 cup beef broth
1 tbsp brown sugar
2 tsp Dijon mustard
1 tbsp apple cider vinegar
2 bay leaves
1 tsp dried thyme
1 tsp salt
0.5 tsp black pepper
Instructions
1. Pat beef dry and cut into chunks. Toss with flour to coat.
2. Heat butter or oil in a Dutch oven. Sear beef on all sides until browned. Remove and set aside.
3. Reduce heat and add sliced onions with a pinch of salt. Cook for 25–30 minutes until caramelized. Stir in garlic in the last minute.
4. Return beef to the pot. Pour in beer and scrape up any browned bits.
5. Add beef broth, brown sugar, Dijon mustard, apple cider vinegar, bay leaves, thyme, salt, and pepper.
6. Cover and simmer on low for 2.5 to 3 hours, until beef is tender and sauce thickens.
7. Discard bay leaves. Taste and adjust seasoning. Serve hot with your choice of sides.
