Ingredients
6 large yellow onions
4 tablespoons butter
8 cups beef broth
1 cup dry white wine
1 bay leaf
4 sprigs thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 baguette, sliced
2 cups shredded Gruyère cheese
Instructions
1. Slice the onions thinly. In a heavy pot, melt butter over medium-low heat. Add onions and a pinch of salt. Stir occasionally and cook for 45 minutes until deeply golden and caramelized.
2. Add white wine and scrape up any browned bits. Simmer for 5 minutes. Add beef broth, bay leaf, and thyme. Simmer uncovered for 30 minutes.
3. While soup simmers, toast baguette slices in the oven until crisp and golden.
4. Remove bay leaf and thyme stems from the soup.
5. Ladle soup into oven-safe bowls. Place a toasted baguette slice on top of each. Sprinkle generously with shredded Gruyère.
6. Broil bowls until cheese is melted and lightly browned, about 3–5 minutes.
7. Serve immediately while hot and bubbling.
