Ingredients
2 cups chopped tomatoes
1 large cucumber, sliced
1/2 red onion, thinly sliced
1/2 green bell pepper, sliced into rings
1/2 cup Kalamata olives
6 oz feta cheese block
1/4 teaspoon dried oregano
1/4 cup extra virgin olive oil
1 tablespoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Instructions
1. Slice the cucumbers, tomatoes, and red onions. Cut the green bell pepper into thin rings. If the onion is too strong, soak it briefly in cold water.
2. Combine the chopped vegetables and olives in a large mixing bowl.
3. Drizzle with olive oil and red wine vinegar. Sprinkle with dried oregano, salt, and black pepper.
4. Add the feta on top either as a slab or gently crumbled. Finish with another drizzle of olive oil and oregano.
5. Serve immediately for best freshness, or chill for up to 2 days if prepping ahead.

Use a block of sheep’s milk feta for a richer flavor.
