Ingredients
2 pounds butternut squash, peeled and cubed
2 large apples, cored and sliced
2 tablespoons olive oil
2 tablespoons maple syrup
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
1/4 teaspoon black pepper
1/3 cup chopped pecans (optional)
Instructions
1. Preheat oven to 400°F and line a baking sheet with parchment paper.
2. In a large bowl, combine cubed butternut squash and sliced apples.
3. Add olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper. Toss to coat well.
4. Spread the mixture evenly on the prepared baking sheet in a single layer.
5. Roast for 30 to 35 minutes, stirring halfway through, until the squash is tender and the edges are caramelized.
6. If using pecans, sprinkle them over the top in the last 10 minutes of baking to toast.
