Description

This hearty Baked Beef Enchilada Casserole recipe is packed with flavorful ground beef, layers of tortillas, melted cheese, and rich enchilada sauce. A perfect family dinner idea, this Tex-Mex casserole is easy to make ahead, freezer-friendly, and ideal for weeknight comfort food. Great alternative to classic enchiladas!


Ingredients

1 lb ground beef

1 medium yellow onion, chopped

2 cloves garlic, minced

2 tbsp taco seasoning

1 ½ cups red enchilada sauce

½ cup sour cream

8 flour or corn tortillas

2 cups Mexican blend shredded cheese

2 tbsp chopped cilantro

2 tbsp green onions, sliced (optional)


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large skillet, cook the ground beef over medium heat until browned.

3. Add chopped onion and cook until soft, about 3–4 minutes.

4. Stir in minced garlic and taco seasoning. Add a splash of water and simmer for 2 minutes.

5. In a small bowl, mix sour cream with ½ cup of enchilada sauce. Set aside.

6. Lightly grease a 9×13-inch baking dish. Spread a thin layer of enchilada sauce on the bottom.

7. Layer tortillas over the sauce, followed by some of the beef mixture, a drizzle of sour cream sauce, and a handful of cheese.

8. Repeat layers until ingredients are used, finishing with tortillas, enchilada sauce, and cheese on top.

9. Cover with foil and bake for 20 minutes.

10. Remove foil and bake for an additional 10 minutes until cheese is bubbly and golden.

11. Let it cool for 5 minutes before slicing. Garnish with chopped cilantro and green onions if desired.

Notes

This recipe is great for freezing—just wrap individual slices and store for up to 3 months.

You can swap sour cream for Greek yogurt for a tangier flavor and extra protein.

Try mixing in a can of black beans or corn for added texture and flavor.
