Description
Baked Feta Pasta is a creamy, oven roasted pasta recipe made with feta cheese, cherry tomatoes, garlic, olive oil, and fresh basil for an easy weeknight dinner packed with rich Mediterranean flavor.
Ingredients
12 ounces pasta
8 ounces block feta cheese
2 pints cherry or grape tomatoes
1/3 cup olive oil
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh basil, chopped
1/2 cup reserved pasta water
Instructions
1. Preheat the oven to 400°F and add the tomatoes to a medium baking dish. Scatter the garlic over the top, pour in the olive oil, and season with Italian seasoning, red pepper flakes, salt, and black pepper. Place the block of feta in the center.
2. Bake for 30 to 35 minutes until the tomatoes have burst and the feta is soft and lightly golden.
3. While the feta and tomatoes bake, cook the pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
4. Remove the baking dish from the oven and mash the feta and tomatoes together until creamy.
5. Add the cooked pasta to the baking dish and toss everything together, adding reserved pasta water as needed to loosen the sauce.
6. Stir in the fresh basil, taste for seasoning, and serve warm.
Notes
For the creamiest sauce, use a block of feta packed in brine instead of pre crumbled feta.
Reserve the pasta water before draining because it helps the sauce cling to the pasta.
Serve it right away for the best texture, since the pasta will absorb more sauce as it sits.
