Description
Baked Greek Yogurt Chicken is a juicy, flavorful chicken dinner made with Greek yogurt, lemon, garlic, and herbs, then baked until tender and golden. This easy baked chicken recipe is perfect for weeknights, meal prep, and healthy family dinners when you want something simple, creamy, and packed with Mediterranean-inspired flavor.
Ingredients
2 pounds boneless skinless chicken breasts
1 cup plain Greek yogurt
1 tablespoon olive oil
2 tablespoons lemon juice
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon fresh parsley, chopped
Instructions
1. Preheat your oven to 400°F and lightly grease a baking dish.
2. In a medium bowl, mix the Greek yogurt, olive oil, lemon juice, garlic, oregano, paprika, salt, and black pepper until smooth.
3. Pat the chicken breasts dry, then coat them evenly in the yogurt marinade.
4. Let the chicken rest in the marinade for 20 to 30 minutes at room temperature, or refrigerate for up to 4 hours.
5. Arrange the chicken in the prepared baking dish in a single layer and spoon any extra marinade over the top.
6. Bake for 25 to 30 minutes, or until the chicken is fully cooked and the top looks lightly golden.
7. Broil for 1 to 2 minutes if you want extra color on top.
8. Let the chicken rest for 5 minutes, then sprinkle with chopped parsley and serve.
Notes
Use full-fat Greek yogurt for the creamiest texture and best oven finish.
If your chicken breasts are very thick, pound them lightly so they bake more evenly.
A quick broil at the end gives the top a more golden look without drying out the chicken.
