Ingredients
1 fillet salmon per person
1 bunch asparagus, trimmed
1 lemon, sliced and juiced
3 cloves garlic, minced
3 tablespoons butter, melted
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon fresh parsley, chopped (optional)
Instructions
1. Preheat oven to 400°F (200°C). Prepare foil sheets for each salmon fillet.
2. Place trimmed asparagus in the center of each foil sheet. Drizzle with olive oil and sprinkle with salt and pepper.
3. Set a salmon fillet on top of the asparagus.
4. In a small bowl, mix melted butter, minced garlic, lemon juice, and olive oil.
5. Spoon the lemon garlic butter sauce over the salmon. Top each fillet with a lemon slice.
6. Fold the foil into a sealed packet, leaving room for steam to circulate.
7. Bake for 15–18 minutes or until salmon flakes easily with a fork.
8. Carefully open packets, transfer to plates, and spoon any remaining sauce over top. Garnish with fresh parsley.
