Ingredients

3 large ripe bananas

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup brown sugar

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

3/4 cup buttermilk

2 large eggs

1 teaspoon vanilla extract

1/2 cup unsalted butter, melted

8 ounces cream cheese, softened

1/2 cup unsalted butter, softened (for frosting)

3 cups powdered sugar

2 tablespoons heavy cream

1 teaspoon vanilla extract (for frosting)


Instructions

1. Preheat your oven to 350°F. Grease and flour a 9×13-inch baking pan. Mash ripe bananas until mostly smooth.

2. In a large bowl, mix mashed bananas, granulated sugar, brown sugar, eggs, buttermilk, melted butter, and vanilla until well combined.

3. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Add dry ingredients to wet mixture and stir until just combined.

4. Pour batter into prepared pan and smooth the top. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.

5. Let the cake cool completely before frosting.

6. Beat cream cheese and butter until fluffy. Add powdered sugar gradually, then heavy cream and vanilla extract. Beat until smooth and spreadable.
