Ingredients
1.5 lbs stew meat
3 cups broccoli florets
1/2 cup soy sauce
1/4 cup brown sugar
3 cloves garlic
1 tablespoon fresh ginger
1 cup beef broth
2 tablespoons cornstarch
1 tablespoon sesame oil
2 tablespoons vegetable oil
1/2 teaspoon red pepper flakes (optional)
2 stalks green onions (for garnish)
1/4 cup water (for slurry)
Instructions
1. Heat vegetable oil in a large skillet or Dutch oven. Brown the stew meat in batches until well seared.
2. Add garlic and ginger to the pan, sauté until fragrant. Stir in soy sauce, beef broth, brown sugar, sesame oil, and red pepper flakes. Bring to a simmer.
3. Return browned stew meat to the pot. Cover and simmer on low for 1.5 to 2 hours until meat is tender.
4. Add broccoli florets during the last 10 minutes of cooking. Cover to let them steam or stir to soften in sauce.
5. Mix cornstarch with water and stir slurry into sauce. Simmer until sauce is thick and glossy.
6. Garnish with green onions and serve over rice or noodles.

Use chuck stew meat for the best tenderness.
