Ingredients
1.5 pounds beef tips
8 ounces mushrooms, sliced
1 medium yellow onion, diced
3 garlic cloves, minced
2 cups beef broth
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon cornstarch
Salt and black pepper to taste
1 tablespoon olive oil
Instructions
1. Heat olive oil in a skillet or Instant Pot and sear beef tips until browned on all sides.
2. Add diced onion and sliced mushrooms. Sauté until onions are soft and mushrooms release their moisture.
3. Stir in garlic and cook for one more minute.
4. Pour in beef broth, Worcestershire sauce, and soy sauce. Scrape up any browned bits for added flavor.
5. For slow cooker: transfer mixture and cook on low for 6–7 hours or high for 3–4 hours.
6. For Instant Pot: seal and cook on high pressure for 25 minutes, natural release for 10 minutes.
7. Mix cornstarch with water to create a slurry, then stir into the pot and cook until sauce thickens.
8. Season with salt and pepper to taste, then serve hot over mashed potatoes, noodles, or rice.
Notes
For the most tender results, use chuck roast or sirloin tips.
If you love a thicker sauce, double the cornstarch slurry.
