Ingredients

1 boneless, skin-on turkey breast

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 stalks celery, chopped

1 tablespoon fresh sage, chopped

1 teaspoon fresh rosemary, chopped

1 teaspoon fresh thyme leaves

1/2 cup dried cranberries or 1 cup diced apple

4 cups bread cubes, slightly dried

1/2 cup chicken broth

2 tablespoons butter

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Melt butter in a large skillet over medium heat. Add onion and celery; cook until softened, about 8 minutes.

2. Stir in garlic, sage, rosemary, and thyme; cook until fragrant.

3. Add cranberries or apples, then mix in bread cubes. Slowly add chicken broth until moist but not soggy. Season with salt and pepper. Let stuffing cool.

4. Butterfly the turkey breast: slice it horizontally without cutting all the way through, then open like a book. Cover with plastic wrap and pound to 3/4 inch thickness.

5. Spread stuffing over turkey breast, leaving a 1-inch border. Roll tightly and tie with kitchen twine.

6. Preheat oven to 375°F (190°C). Heat olive oil in an oven-safe skillet and sear turkey roll until golden on all sides.

7. Transfer skillet to the oven and roast for 45 to 55 minutes or until internal temp reaches 160°F.

8. Let rest 10 minutes before slicing into pinwheels.
