Ingredients
6 boneless skinless chicken thighs
2 tablespoons olive oil
3 tablespoons fresh lemon juice
4 cloves garlic minced
1 tablespoon dried oregano
1 teaspoon salt
1 teaspoon black pepper
1 red onion sliced
1 cup cherry tomatoes halved
1 cup kalamata olives pitted
1⁄3 cup crumbled feta cheese for garnish
Instructions
1. Slice the red onion and halve the cherry tomatoes. Mince the garlic. Trim any excess fat from the chicken.
2. In a small bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Stir until well mixed. Pour half into the crockpot.
3. Place chicken thighs in the crockpot. Add sliced onions, cherry tomatoes, and olives on top. Pour the rest of the marinade over.
4. Cover and cook on low for 6 hours or on high for 3 to 4 hours until the chicken is very tender.
5. Top with crumbled feta and fresh parsley if desired. Serve warm over rice, salad, or inside pita bread.

Feel free to swap chicken thighs for chicken breasts if preferred.
