Description

This BEST EVER One-Pot Lasagna Soup brings together rich tomato broth, tender noodles, ground beef, and Italian sausage in a cozy, cheesy one-pot meal. Perfect for weeknights, this lasagna soup recipe is comforting, flavorful, and family-friendly with minimal cleanup. Great for leftovers and freezer meals too.


Ingredients

1 tablespoon olive oil

1 yellow onion, diced

4 garlic cloves, minced

1 pound ground beef

1/2 pound Italian sausage

2 tablespoons tomato paste

1 can (28 ounces) crushed tomatoes

4 cups beef broth

8 ounces lasagna noodles, broken into pieces

1 cup ricotta cheese

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons chopped fresh basil or parsley

Salt and pepper to taste


Instructions

1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 5 minutes. Add minced garlic and stir for 1 minute.

2. Add ground beef and Italian sausage. Cook until browned and crumbled. Drain excess fat if necessary.

3. Stir in tomato paste and cook for 2-3 minutes to deepen the flavor.

4. Pour in crushed tomatoes and beef broth. Bring to a simmer.

5. Add broken lasagna noodles. Simmer for 12-15 minutes, stirring occasionally, until noodles are tender.

6. Reduce heat to low. Add ricotta cheese and stir gently.

7. Add mozzarella and Parmesan cheese. Stir until melted into the soup.

8. Season with salt and pepper to taste.

9. Garnish with fresh basil or parsley before serving. Serve hot.

Notes

Make sure to stir the soup often after adding noodles to prevent sticking.

For a lighter version, use ground turkey instead of beef and sausage.

Add extra broth when reheating, as the noodles absorb liquid over time.
