These Best Ever Pecan Pie Bars are a gooey, buttery twist on the classic pecan pie with a melt-in-your-mouth shortbread crust. A perfect dessert bar recipe for holidays or everyday baking, packed with crunchy pecans and rich caramel flavor.
Ingredients
1 cup unsalted butter
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 teaspoon salt
3 large eggs
1 cup light corn syrup
1 cup brown sugar
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
2 cups pecan halves
Instructions
1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
2. In a mixing bowl, combine 1 cup unsalted butter, 2 cups flour, 1/2 cup granulated sugar, and 1/4 tsp salt. Mix until crumbly.
3. Press the crust mixture into the bottom of the prepared pan and bake for 18–20 minutes, or until lightly golden.
4. While the crust bakes, whisk together 3 eggs, 1 cup corn syrup, 1 cup brown sugar, 1 1/2 tsp vanilla extract, and 1/4 tsp salt until smooth.
5. Stir in 2 cups pecan halves to coat them in the filling.
6. Pour the pecan mixture over the hot crust and spread it out evenly.
7. Return the pan to the oven and bake for 25–30 minutes, until the filling is set.
8. Cool completely in the pan. Chill in the fridge for cleaner slices.
9. Cut into 24 squares and serve.
Notes
Let bars cool fully before slicing to avoid messy edges.
You can freeze these bars for up to 2 months in a single layer.
Toasting the pecans beforehand intensifies their flavor.
