Ingredients
1 cup unsalted butter
0.75 cup powdered sugar
1 tablespoon lime zest
2 tablespoons fresh lime juice
1 teaspoon vanilla extract
1.75 cups all-purpose flour
0.25 cup cornstarch
0.25 teaspoon salt
Instructions
1. Cream the softened butter and powdered sugar together until light and fluffy, about 2 to 3 minutes.
2. Add the lime zest, lime juice, and vanilla extract. Mix until fully incorporated.
3. In a separate bowl, whisk together the flour, cornstarch, and salt.
4. Slowly add the dry ingredients to the wet mixture, mixing until a dough forms.
5. Shape the dough into a log for slicing or a disc for rolling. Wrap in plastic wrap and chill for at least 1 hour.
6. Preheat the oven to 350°F (175°C). Slice or cut the chilled dough into desired shapes.
7. Place cookies on a parchment-lined baking sheet and bake for 10 to 12 minutes, until edges are just barely golden.
8. Let cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
