Ingredients

1 lb cremini mushrooms

2 tbsp butter

1 tbsp olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 tsp fresh thyme leaves

2 tbsp all-purpose flour

4 cups vegetable or chicken broth

1 cup heavy cream

1 tsp salt

½ tsp black pepper


Instructions

1. Heat olive oil and butter in a large pot. Add chopped onion and cook until translucent.

2. Stir in garlic and thyme and cook until fragrant.

3. Add mushrooms and salt. Sauté until mushrooms are golden and their moisture has evaporated.

4. Sprinkle flour over mushrooms and stir to coat. Cook for 2 minutes.

5. Gradually add broth, stirring continuously. Simmer for 10 minutes.

6. Lower heat and stir in cream. Simmer for a few more minutes until creamy.

7. Taste and adjust salt and pepper. Serve warm.

Notes

This soup can be frozen without the cream and finished later.

Feel free to blend half the soup for a smoother texture.

Use a mix of mushrooms for deeper umami flavor.
