Ingredients
1 can refrigerated buttermilk biscuits
1 pound breakfast sausage
1/4 cup all-purpose flour
2 1/2 cups whole milk
1/2 teaspoon salt
1/2 teaspoon black pepper
6 large eggs
1 cup shredded cheddar cheese (optional)
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. In a skillet over medium heat, brown the sausage, crumbling as it cooks.
3. Once fully cooked, sprinkle in the flour and stir to coat the sausage.
4. Slowly pour in the milk while stirring, and cook until thickened into a gravy.
5. Season with salt and black pepper, then remove from heat.
6. Cut the biscuits into quarters and spread half in the bottom of the baking dish.
7. Pour the sausage gravy evenly over the biscuit layer.
8. In a bowl, whisk the eggs and pour them over the gravy layer.
9. Add remaining biscuit pieces on top, and sprinkle with cheddar cheese if using.
10. Bake for 35 to 40 minutes or until the top is golden and the eggs are set.
11. Let cool for 5 minutes before serving.
Notes
This casserole can be made ahead and stored overnight before baking.
You can swap in turkey sausage or vegetarian sausage crumbles.
