Ingredients
6 small yellow onions
2 cups buttermilk
3 cups all-purpose flour
2 teaspoons paprika
1 teaspoon garlic powder
½ teaspoon cayenne pepper
1 teaspoon salt
½ teaspoon black pepper
Oil for deep frying
1 cup mayonnaise
½ cup buttermilk (for ranch)
1 tablespoon chopped dill
1 tablespoon chopped chives
1 teaspoon lemon juice
Salt and pepper to taste
Instructions
1. Peel the onions, leaving the root intact. Slice off just enough of the root to keep the layers together, then make several evenly spaced cuts downward to create petals. Soak the onions in ice water for 30 minutes to allow them to bloom.
2. In a bowl, whisk together mayonnaise, buttermilk, chopped fresh herbs, lemon juice, salt, and pepper. Chill the dip while you fry the onions.
3. Combine flour, paprika, garlic powder, cayenne, salt, and pepper in a large bowl. Whisk to mix evenly.
4. Remove the onions from the ice bath and pat dry. Dip each one into buttermilk, then dredge in the seasoned flour, making sure all petals are coated.
5. Heat oil in a deep pan or fryer to 350°F. Fry the onions in batches until golden and crispy, about 3-4 minutes per batch. Drain on paper towels.
6. Arrange the hot, crispy onions on a platter with a bowl of chilled buttermilk ranch in the center. Serve immediately.
