Ingredients
1 ½ cups chocolate cookie crumbs
¼ cup melted butter
24 oz cream cheese
1 cup granulated sugar

3 large eggs
1 cup sour cream
1 tsp vanilla extract
1 can (21 oz) cherry pie filling
1 cup heavy cream
2 tbsp powdered sugar
Instructions
1. Mix chocolate cookie crumbs with melted butter and press into a springform pan. Bake at 325°F for 10 minutes. Cool.
2. Melt dark chocolate and let it cool. Beat cream cheese and sugar until smooth.
3. Add sour cream and vanilla extract to the mixture. Mix in the melted chocolate.
4. Beat in the eggs one at a time, just until combined.
5. Pour batter into crust. Bake at 300°F in a water bath for 60–70 minutes until edges are set.
6. Let cheesecake rest in the oven for 1 hour with the door cracked open. Chill overnight.
7. Top chilled cheesecake with cherry pie filling.
8. Whip heavy cream with powdered sugar until stiff peaks form.
