Ingredients
1 pound shrimp, peeled and deveined
2 cups corn kernels (fresh or frozen)
1 cup heavy cream
3 cups chicken broth
2 Yukon gold potatoes, diced
1 yellow onion, chopped
2 celery stalks, chopped
3 garlic cloves, minced
1 tablespoon Cajun seasoning
1 teaspoon paprika
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon fresh thyme or parsley, chopped
Salt to taste

Instructions
1. Toss shrimp with Cajun seasoning, paprika, and olive oil.
2. Sear shrimp in a hot skillet for 2-3 minutes per side until blackened. Set aside.
3. In a large pot, melt butter. Add onion, celery, and garlic. Sauté until translucent.
4. Stir in diced potatoes and corn. Pour in chicken broth and bring to a boil.
5. Reduce heat and simmer until potatoes are tender, about 15 minutes.
6. Add heavy cream and stir. Simmer gently for 5 minutes.
7. Season with salt, pepper, and herbs.
8. Add blackened shrimp just before serving. Garnish with herbs or extra Cajun spice.
