Ingredients
1 ½ cups all-purpose flour
1 ½ teaspoons baking powder
¼ teaspoon salt
¾ cup granulated sugar
2 teaspoons blood orange zest
2 large eggs
½ cup olive oil
½ cup Greek yogurt
¼ cup blood orange juice
1 teaspoon vanilla extract
¾ cup powdered sugar (for glaze)
2 to 3 tablespoons blood orange juice (for glaze)
Instructions
1. Preheat oven to 350°F (175°C). Grease a loaf or bundt pan and line with parchment if using a loaf.
2. Zest and juice the blood oranges. Set aside zest and juice separately.
3. In a medium bowl, whisk together flour, baking powder, and salt.
4. In a large bowl, combine sugar and blood orange zest. Rub together with fingers to release oils.
5. Whisk eggs into the sugar-zest mixture, followed by olive oil, Greek yogurt, blood orange juice, and vanilla.
6. Gently fold dry ingredients into wet mixture until just combined. Do not overmix.
7. Pour batter into prepared pan and smooth the top. Bake for 40–50 minutes, or until a toothpick comes out clean.
8. Cool cake in pan for 10 minutes, then transfer to wire rack.
9. Whisk together powdered sugar and blood orange juice to make glaze.
10. Once cake is completely cool, drizzle glaze over the top.

Use ripe, juicy blood oranges for maximum flavor and color.
Let the cake cool completely before glazing to avoid melting the glaze.
