Description

This Broccoli Apple Salad is a refreshing and crunchy mix of raw broccoli, sweet apples, creamy dressing, and chewy cranberries. A perfect gluten-free side dish for fall gatherings, meal prep, or a light lunch idea. Great salad with broccoli and apples!


Ingredients

2 heads broccoli florets

2 medium apples

1/4 medium red onion

1/2 cup dried cranberries

1/3 cup sunflower seeds

1/3 cup mayonnaise

1/3 cup Greek yogurt

1 tablespoon apple cider vinegar

1 tablespoon honey

1/4 teaspoon salt

1/8 teaspoon pepper


Instructions

1. Chop the broccoli into small florets and dice the apples into cubes. Thinly slice the red onion and place all in a large mixing bowl.

2. In a separate bowl, whisk together mayonnaise, Greek yogurt, apple cider vinegar, honey, salt, and pepper until smooth.

3. Pour the dressing over the broccoli mixture. Add cranberries and sunflower seeds. Toss until fully coated.

4. Chill in the fridge for at least 30 minutes before serving to let the flavors develop.

Notes

Use crisp apples like Honeycrisp or Fuji for best texture.

You can blanch the broccoli for 1 minute if you prefer it less raw.

For added protein, sprinkle cooked bacon bits or crumbled feta on top.
