Ingredients
0.5 cup unsalted butter
1 cup packed brown sugar
0.25 cup heavy cream
1 teaspoon vanilla extract
0.25 teaspoon salt
0.75 cup toffee bits
8 ounces semi-sweet chocolate (for coating)
Instructions
1. Melt the butter in a saucepan over low heat, then stir in the brown sugar until completely dissolved.
2. Whisk in the heavy cream and let the mixture simmer for one minute to thicken slightly.
3. Remove from heat, then stir in vanilla extract and salt.
4. Transfer the mixture to a bowl and let it cool to room temperature.
5. Fold in the toffee bits once the mixture is cool.
6. Chill the bowl in the refrigerator for one hour until firm.
7. Scoop and roll the mixture into balls, placing them on a parchment-lined tray.
8. Freeze the truffle balls for 20 minutes to firm them up.
9. Melt the semi-sweet chocolate and dip each ball, tapping off excess chocolate.
10. Place dipped truffles on parchment and top with extra toffee bits while still wet.
11. Let the chocolate shell set at room temp or in the fridge.
12. Store in an airtight container chilled or at room temperature.
