Description

Buffalo Cauliflower Wrap is a spicy, veggie-packed lunch or dinner idea featuring roasted cauliflower tossed in buffalo sauce, crisp lettuce, and creamy dressing, all wrapped in a soft tortilla. This easy vegetarian wrap is perfect for meal prep, plant-based eating, and game-day bites.


Ingredients

1 small head cauliflower florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1⁄3 cup buffalo sauce

4 large tortilla wraps

1 cup shredded lettuce

1⁄2 cup shredded carrots

1⁄2 cup cucumber slices

1⁄4 cup ranch or blue cheese dressing


Instructions

1. Preheat oven to 425°F. Toss cauliflower florets with olive oil, garlic powder, and onion powder until evenly coated.

2. Spread cauliflower on a baking sheet and roast for 25–30 minutes, turning halfway, until golden and crisp.

3. Remove cauliflower and toss in buffalo sauce. Let sit for a couple of minutes to absorb flavor.

4. Warm the tortilla wraps slightly for flexibility.

5. Layer lettuce, carrots, cucumber slices, and buffalo cauliflower in the center of each wrap.

6. Drizzle with ranch or blue cheese dressing.

7. Fold the sides in and roll up tightly. Slice in half if desired and serve immediately.

Notes

This wrap tastes best fresh but can be meal-prepped with separate components.

Use your favorite brand of buffalo sauce to control heat levels.

Try swapping in spinach, avocado, or red cabbage for extra color and flavor.
