Description

These chewy Butterscotch Drops are the ultimate nostalgic cookie, filled with rich butterscotch chips and a soft, golden center. A perfect treat for holidays, everyday baking, or freezing ahead. This easy cookie recipe uses pantry staples and delivers buttery caramel flavor in every bite. Perfect dessert idea for cookie swaps or cozy coffee breaks.

Ingredients

1 cup unsalted butter, softened

1 cup brown sugar

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

2 cups butterscotch chips

Instructions

1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

4. In a separate bowl, whisk together the flour, baking soda, and salt.

5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.

6. Fold in the butterscotch chips evenly.

7. Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

8. Bake for 9 to 11 minutes or until the edges are golden and the centers are just set.

9. Let the cookies cool on the sheet for 5 minutes before transferring to a wire rack.

Notes

Make sure the butter is at room temperature for easy creaming.

Avoid overmixing once the flour is added to keep cookies soft.

Let cookies rest on the baking sheet before moving to prevent breaking.
