Ingredients
1 pound linguine
1 pound ground beef
1 ½ cups Velveeta cheese, cubed
¾ cup grated Parmesan cheese
1 cup heavy cream
4 garlic cloves, minced
1 tablespoon Cajun seasoning
2 tablespoons butter
1 tablespoon olive oil
Salt, to taste
Black pepper, to taste
Instructions
1. Bring a large pot of salted water to a boil and cook the linguine until al dente. Drain and reserve ½ cup pasta water.
2. In a large skillet, heat olive oil and butter over medium heat. Add ground beef and break it apart while cooking. Season with Cajun seasoning and cook until browned and crispy on the edges. Remove from skillet.
3. In the same skillet, add more butter if needed and sauté minced garlic until fragrant. Pour in heavy cream and stir in Velveeta until melted and smooth. Add Parmesan and stir until fully combined.
4. Return beef to the skillet. Add linguine and gently toss to coat. Add reserved pasta water a little at a time until the sauce clings to the pasta.
5. Taste and adjust seasoning with salt and black pepper. Serve hot, garnished with extra Parmesan or fresh parsley if desired.
Notes
Make sure to reserve some pasta water; it’s key to loosening and emulsifying the sauce.
Don’t overcook the beef—crispy edges add flavor and texture.
Feel free to spice it up with extra Cajun seasoning or red pepper flakes if you like it hotter.
