Description

A bold and creamy dinner, Cajun Chicken Bites with Creamy Garlic Herb Alfredo Twists combines spicy Cajun chicken, rich Alfredo sauce, and herby pasta twists. This easy chicken pasta recipe is perfect for weeknight dinners or special comfort food meals.


Ingredients

1 lb chicken breast

2 tbsp Cajun seasoning

1 tbsp olive oil

3 garlic cloves, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tbsp butter

2 tbsp chopped fresh parsley

12 oz rotini pasta

1 tsp salt

1/2 tsp black pepper

1 tsp Italian seasoning

1 tbsp lemon juice


Instructions

1. Cut the chicken breast into bite-sized cubes and coat with Cajun seasoning. Let sit for 10 minutes.

2. Heat olive oil in a skillet over medium-high heat. Sear chicken pieces until golden and fully cooked, about 6-7 minutes. Remove and set aside.

3. Cook rotini pasta in a large pot of salted boiling water until al dente. Drain and set aside.

4. In the same skillet, melt butter over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.

5. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, Italian seasoning, salt, and black pepper. Simmer until slightly thickened, about 4-5 minutes.

6. Add the cooked pasta to the sauce and stir to coat. Mix in lemon juice and chopped parsley.

7. Top the pasta with Cajun chicken bites. Garnish with more Parmesan and parsley before serving.

Notes

Use freshly grated Parmesan for the smoothest Alfredo texture.

Don’t overcrowd the skillet while cooking the chicken—work in batches if needed.

Add a splash of pasta water if the Alfredo sauce gets too thick.
