Description

This Cajun Chicken Rotini in Creamy Mozzarella Velveeta Sauce is the ultimate comfort food packed with bold Cajun flavor, tender chicken, and a rich, velvety cheese sauce. It’s a creamy Cajun pasta recipe that’s perfect for weeknight dinners or feeding a crowd.


Ingredients

1 lb rotini pasta

1 lb boneless chicken breast, thinly sliced

2 tbsp Cajun seasoning

1 tbsp butter

2 cloves garlic, minced

1 cup heavy cream

1 cup Velveeta cheese, cubed

1 cup shredded mozzarella cheese

½ tsp salt

¼ tsp black pepper


Instructions

1. Boil a large pot of salted water and cook rotini until al dente. Drain and reserve a bit of pasta water.

2. Season chicken with Cajun seasoning, salt, and pepper.

3. In a large skillet, melt butter over medium-high heat and sear chicken until golden brown and cooked through. Set aside.

4. In the same skillet, lower heat to medium. Add minced garlic and sauté until fragrant.

5. Pour in heavy cream and stir until warm.

6. Add Velveeta and mozzarella cheese. Stir continuously until melted into a smooth sauce.

7. Return cooked chicken and rotini to the skillet. Mix until everything is well coated.

8. Add a splash of reserved pasta water if needed to thin the sauce.

9. Serve hot, optionally garnished with parsley or extra Cajun seasoning.

Notes

Let the dish cool before storing in an airtight container.

To reheat, add a splash of cream or milk for creaminess.
