Ingredients
340g rigatoni pasta
450g beef sirloin, cut into strips
2 tablespoons olive oil
4 tablespoons butter
4 garlic cloves, minced
2 teaspoons Cajun seasoning
1 cup heavy cream
1 cup grated Parmesan cheese
Salt to taste
Black pepper to taste
2 tablespoons chopped fresh parsley
Instructions
1. Heat olive oil in a skillet over medium-high heat. Season beef with salt and pepper, then sear in batches until browned. Set aside.
2. Cook rigatoni in salted boiling water until al dente. Reserve 1 cup of pasta water, then drain.
3. In the skillet, melt butter on low heat. Add garlic and sauté until fragrant. Stir in Cajun seasoning.
4. Pour in heavy cream, then add Parmesan cheese. Simmer until slightly thickened.
5. Return beef to skillet. Add cooked pasta and toss everything together. Add pasta water if needed to loosen sauce.
6. Sprinkle with chopped parsley and more Parmesan if desired. Serve hot.
Notes
This pasta is best served fresh while the sauce is silky.
You can replace beef with shrimp, chicken, or mushrooms.
