Ingredients
2 ½ pounds sweet potatoes
½ cup brown sugar
¼ cup unsalted butter
1 teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon salt
1 teaspoon vanilla extract
2 tablespoons water
Instructions
1. Peel and slice the sweet potatoes into thick, even rounds.
2. Place them in a baking dish, layering evenly.
3. In a saucepan, melt butter with brown sugar, water, cinnamon, nutmeg, salt, and vanilla extract. Stir until combined and bubbling.
4. Pour the glaze over the sweet potatoes evenly.
5. Cover the dish with foil and bake at 375°F for 45 minutes.
6. Remove foil, baste the potatoes with the glaze, and return to the oven uncovered for 20–25 more minutes until caramelized.
7. Serve warm with extra glaze spooned on top.
