Ingredients
1 and 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1/2 cup granulated sugar
1 tsp vanilla extract
2 large eggs
2 cups chopped apples (Granny Smith or Honeycrisp)
1/2 tsp ground cinnamon
1 tbsp all-purpose flour
1/3 cup caramel sauce
Instructions
1. Preheat oven to 350°F and line a 9×13-inch baking dish with parchment paper.
2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan. Bake for 8 minutes and let cool.
3. In another bowl, beat cream cheese until smooth. Add sugar and vanilla, mixing until creamy. Add eggs one at a time, mixing well.
4. Pour cheesecake batter over the cooled crust and smooth evenly.
5. In a separate bowl, toss chopped apples with cinnamon, sugar, and flour. Scatter the apple mixture over the cheesecake layer.
6. Bake for 40–45 minutes until the center is just set. Let cool completely, then refrigerate for at least 3 hours or overnight.
7. Before serving, slice into bars and drizzle with caramel sauce.
Notes
A mix of tart and sweet apples works best for flavor and texture.
You can use store-bought or homemade caramel for the topping.
Chill thoroughly before slicing for clean, bakery-style bars.
