Ingredients
1 pound beef liver
2 large yellow onions
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon balsamic vinegar or Worcestershire sauce
0.5 teaspoon salt
0.25 teaspoon black pepper
1 tablespoon chopped fresh parsley (optional)
0.5 cup milk (optional for soaking liver)
Instructions
1. Slice the onions thinly. In a large skillet, melt the butter with olive oil over medium-low heat. Add onions and cook, stirring occasionally, for 25 to 30 minutes until caramelized and golden.
2. Meanwhile, slice the liver into strips. Optionally soak in milk for 20 to 30 minutes, then drain and pat dry.
3. Remove caramelized onions from the skillet and set aside. Add more oil if needed. Raise the heat to medium-high and sear liver slices for about 2 minutes per side. Avoid overcooking.
4. Return onions to the pan. Add balsamic vinegar or Worcestershire and stir gently for 1 to 2 minutes until heated through.
5. Season with salt and pepper. Garnish with fresh parsley and serve hot.
