Ingredients
2 cups cubed butternut squash
2 large yellow onions, thinly sliced
2 tablespoons olive oil
1 sheet puff pastry or 1 pie crust
4 ounces goat cheese, crumbled
1/4 cup grated Parmesan cheese
1 teaspoon fresh thyme leaves
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat oven to 400°F. Peel and cube the butternut squash. Toss with 1 tablespoon olive oil, salt, and pepper. Roast on a baking sheet for 25-30 minutes until tender and golden.
2. While squash is roasting, caramelize onions. Heat 1 tablespoon olive oil in a skillet over medium-low heat. Add sliced onions and cook slowly, stirring often, for 30-40 minutes until deeply golden and soft.
3. Roll out the puff pastry or pie dough and fit it into a tart pan. Prick the bottom with a fork and chill in the fridge for 10-15 minutes.
4. Spread the caramelized onions evenly over the crust. Layer the roasted squash on top. Add crumbled goat cheese, sprinkle with Parmesan, and fresh thyme.
5. Bake the tart at 375°F for 25-30 minutes until the crust is golden and cheese is lightly browned. Let cool slightly before serving.
Notes
Make sure to caramelize the onions slowly for full flavor.
Chill the pastry before baking to help it crisp up.
You can substitute goat cheese with feta or ricotta if you prefer.
