Cattle Drive Casserole is a hearty, comforting Tex-Mex dinner made with ground beef, taco seasoning, creamy layers, and a golden cornbread topping. Perfect for busy weeknights or freezer meals. This ground beef casserole feeds the whole family with bold flavor and cheesy goodness.
Ingredients
1 pound ground beef
1 packet taco seasoning
1 can (10 oz) Rotel tomatoes
1/2 cup sour cream
4 oz cream cheese
1 1/2 cups shredded cheddar cheese
1 box cornbread mix
1/3 cup milk
1 egg
1 small onion, chopped
Instructions
1. Brown the ground beef in a skillet with chopped onion until fully cooked.
2. Drain any excess grease and stir in the taco seasoning and Rotel tomatoes. Simmer for 5 minutes.
3. In a bowl, mix the sour cream and cream cheese until smooth and creamy.
4. Preheat oven to 350°F. In a baking dish, spread the beef mixture evenly.
5. Layer the cream cheese and sour cream mixture over the beef.
6. Sprinkle shredded cheddar cheese over the creamy layer.
7. In a separate bowl, prepare the cornbread mix using milk and egg.
8. Pour the cornbread batter over the casserole layers.
9. Bake for 35-40 minutes or until the cornbread is golden and cooked through.
10. Let it rest for 5 minutes before serving.
Notes
Make sure to drain the beef well so the casserole doesn’t get soggy.
You can substitute ground turkey or plant-based crumbles for a lighter version.
Add chopped jalapeños or corn to boost flavor and texture.
