Ingredients

3 tablespoons butter

1 medium onion, chopped

4 cloves garlic, minced

3 tablespoons all-purpose flour

4 cups chicken or vegetable broth

2 pounds Yukon Gold potatoes, peeled and diced

1 teaspoon fresh thyme, chopped

1 teaspoon fresh rosemary, chopped

1 cup heavy cream

2 cups sharp cheddar cheese, shredded

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. Melt butter in a large pot over medium heat. Add chopped onion and cook until translucent.

2. Stir in minced garlic and sauté for about 1 minute until fragrant.

3. Sprinkle in flour and cook, stirring constantly, to form a roux. Let it cook for 1–2 minutes.

4. Slowly whisk in the broth until smooth. Add potatoes, thyme, and rosemary.

5. Bring to a boil, then reduce heat and simmer for 15–20 minutes, or until potatoes are fork-tender.

6. Use an immersion blender to blend part of the soup, leaving some potato chunks for texture.

7. Stir in the heavy cream and gradually add cheddar cheese, stirring until melted and smooth.

8. Season with salt and black pepper to taste. Serve warm with toppings of choice.

Notes

This soup can be made vegetarian by using vegetable broth.

For extra depth, top with crispy bacon or a dash of smoked paprika.

Leftovers reheat beautifully with a splash of extra broth or cream.
