Ingredients
4 medium apples
6 oz cream cheese, softened
3 tablespoons granulated sugar
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 sheet pie crust or puff pastry
1 egg, beaten
1 tablespoon cinnamon sugar (optional)
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Wash and core the apples, removing seeds and hollowing the centers without piercing the bottoms.
3. In a mixing bowl, beat the cream cheese, sugar, vanilla, and cinnamon until smooth.
4. Fill each apple with the cheesecake mixture.
5. Roll out the pie crust or puff pastry and cut into strips or circles to wrap each apple.
6. Place wrapped apples on the baking sheet and brush the pastry with beaten egg.
7. Sprinkle cinnamon sugar on top if desired.
8. Bake for 25–30 minutes until golden and apples are tender.
9. Let cool slightly before serving. Serve warm with ice cream or caramel drizzle if desired.
Notes
These pies are best served warm but can be reheated in the oven.
Use Granny Smith or Honeycrisp apples for the best texture.
If making ahead, store in the fridge for up to 3 days.
