Description

A comforting one-pan Cheesy Beef Broccoli and Rice recipe made with ground beef, fluffy rice, tender broccoli, and melty cheddar cheese. Perfect for busy weeknights and family dinners. Try this easy ground beef and rice skillet meal that’s creamy, hearty, and satisfying.


Ingredients

1 lb ground beef

3 cups cooked rice

3 cups broccoli florets

2 cups shredded cheddar cheese

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon butter or oil

1/2 cup milk or cream

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. In a large skillet, heat the butter or oil over medium heat and cook the diced onion until soft and translucent.

2. Add the ground beef to the skillet, breaking it up with a spoon, and cook until browned. Stir in the garlic and cook for another minute.

3. Add the broccoli florets. If using fresh, add a splash of water, cover, and steam until tender. If using frozen, cook until heated through and any extra moisture evaporates.

4. Stir in the cooked rice and combine with the beef and broccoli. Season with salt and pepper.

5. Pour in the milk or cream, then stir in 1 cup of the shredded cheese until melted and creamy.

6. Sprinkle the remaining cheese over the top and cover the skillet with a lid until the cheese melts.

7. Serve warm and enjoy immediately, optionally garnished with red pepper flakes or fresh herbs.

Notes

This recipe can be easily doubled to feed a crowd.

Leftovers store well in the fridge for up to 4 days or freezer for 2 months.

Use sharp cheddar for a stronger cheese flavor or try mixing in mozzarella for extra gooeyness.
