Description

Cheesy Beef & Frozen Potato Casserole is an easy weeknight dinner recipe made with frozen diced potatoes, creamy mushroom soup, and melted cheddar. This hearty ground beef casserole is perfect for family meals or potlucks and freezes well for later. Comfort food at its cheesiest!


Ingredients

1 pound ground beef

4 cups frozen diced potatoes

1 can (10.5 oz) cream of mushroom soup

1 cup sour cream

2 cups shredded cheddar cheese

1 small onion, chopped

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons butter, cut into small cubes


Instructions

1. In a skillet over medium heat, cook ground beef and chopped onion until beef is browned and onion is soft. Season with garlic powder, salt, and pepper. Drain excess fat.

2. In a large bowl, mix cream of mushroom soup, sour cream, and 1 cup of cheddar cheese. Add cooked beef mixture and stir to combine.

3. Grease a 9×13-inch baking dish. Spread frozen diced potatoes evenly in the bottom of the dish.

4. Pour beef mixture over the potatoes and spread evenly.

5. Sprinkle the remaining 1 cup of cheddar cheese on top and dot with butter.

6. Cover with foil and bake at 375°F (190°C) for 35 minutes.

7. Remove foil and bake for an additional 10–15 minutes, until the top is golden and bubbling.

8. Let it rest for 5 minutes before serving.

Notes

This casserole can be assembled ahead of time and refrigerated for up to 24 hours before baking.

Tater tots or shredded hash browns can be used instead of diced potatoes.

Add-ins like cooked bacon, bell peppers, or jalapeños work great for extra flavor.
