Ingredients
2 chicken breasts
1 teaspoon salt
1 teaspoon black pepper
4 garlic cloves, minced
3 tablespoons butter
1 tablespoon olive oil
1 cup heavy cream
1 cup grated Parmesan cheese
10 ounces rigatoni pasta
1 teaspoon Italian seasoning
1 cup shredded mozzarella cheese
Instructions
1. Season chicken breast pieces with salt and pepper.
2. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat.
3. Add chicken and cook until golden brown on all sides, about 5–7 minutes. Remove and set aside.
4. Lower heat and add remaining butter and garlic. Cook for 1–2 minutes until fragrant.
5. Pour in heavy cream and bring to a gentle simmer.
6. Stir in Parmesan cheese and Italian seasoning. Simmer for 3–5 minutes until slightly thickened.
7. Meanwhile, cook rigatoni until al dente. Reserve 1/4 cup pasta water and drain.
8. Add chicken and cooked rigatoni to the skillet with the sauce. Toss gently to coat.
9. If sauce is too thick, stir in a splash of pasta water.
10. Sprinkle mozzarella over the top, cover, and let melt for 2–3 minutes.
11. Stir, serve warm, and garnish with extra Parmesan if desired.
Notes
Use fresh garlic for best flavor in the butter.
Don’t overcook the chicken; keep it juicy by cooking just until golden.
Reserve pasta water to adjust the sauce consistency as needed.
