Ingredients
1 lb rigatoni pasta
1.5 lbs chicken breast
4 garlic cloves, minced
4 tbsp unsalted butter
2 tbsp olive oil
2 cups heavy cream
1 cup parmesan cheese, grated
1 cup mozzarella cheese, shredded
1 tsp salt
1/2 tsp black pepper
1 tsp Italian seasoning
2 tbsp fresh parsley, chopped (optional)
Instructions
1. Boil rigatoni in salted water until al dente, then drain and set aside. Reserve 1/2 cup of pasta water.
2. Season chicken with salt, pepper, and Italian seasoning.
3. Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Sear chicken until golden and cooked through. Remove and slice.
4. In the same skillet, melt remaining butter. Add garlic and sauté just until fragrant.
5. Pour in heavy cream, stir, and bring to a simmer. Add parmesan and mozzarella, whisking until melted and creamy.
6. Return chicken and pasta to the skillet, tossing to coat in the sauce. Add a splash of pasta water if needed to loosen.
7. Garnish with chopped parsley and serve hot.

Use freshly grated cheese for a smoother sauce.
