Description

Ingredients

12 oz bowtie pasta

1 lb chicken breasts

2 tbsp Cajun seasoning

4 garlic cloves, minced

2 tbsp olive oil

2 tbsp butter

1 1/2 cups heavy cream

3/4 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1/2 tsp salt

1/4 tsp black pepper

1 tbsp chopped parsley (optional)


Instructions

1. Bring a large pot of salted water to a boil. Cook bowtie pasta until al dente, then drain and reserve 1/2 cup pasta water.

2. Cut chicken into bite-sized pieces and season with Cajun seasoning, salt, and pepper.

3. In a large skillet, heat olive oil over medium-high. Sear chicken until golden and cooked through. Remove and set aside.

4. Lower heat. Add butter to the skillet and sauté garlic for 1 minute until fragrant.

5. Pour in heavy cream. Once it simmers, slowly stir in Parmesan and mozzarella until melted and smooth.

6. Return chicken to the skillet. Add pasta and toss gently to coat. Add pasta water if needed to loosen the sauce.

7. Garnish with parsley if using and serve immediately.

Notes

Add a pinch of red pepper flakes for extra heat.

Use penne or rotini if you don’t have bowtie pasta.

For a lighter version, substitute half-and-half for cream.
