Ingredients
2 cups mashed potatoes
1 cup shredded cheddar cheese
2 large eggs
1/4 cup milk
2 tablespoons melted butter
1/4 cup all purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Preheat the oven to 375°F and grease a standard muffin pan generously.
2. Mix mashed potatoes, eggs, milk, and melted butter until smooth.
3. Stir in cheese, flour, salt, and black pepper until combined.
4. Fill muffin cups almost to the top with the mixture.
5. Bake for 20–25 minutes until golden and set.
6. Cool briefly, then remove from pan and serve warm.
Notes
Use creamy mashed potatoes for best texture.
Swap cheddar for mozzarella or Monterey Jack if desired.
