This cheesy meatloaf casserole is the ultimate comfort food dinner. Made with seasoned ground beef, creamy mashed potatoes, and melty cheddar cheese, it’s an easy family-friendly weeknight meal. Perfect for meal prep, leftovers, and cozy dinners.
Ingredients
1 pound ground beef
1 cup breadcrumbs
1 large egg
1 small onion, finely diced
1 teaspoon garlic powder
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
3 cups mashed potatoes
2 cups shredded cheddar cheese
Salt and black pepper, to taste
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish.
2. In a large bowl, combine ground beef, breadcrumbs, egg, onion, garlic powder, Worcestershire sauce, half of the ketchup, and season with salt and pepper. Mix until just combined.
3. Press the beef mixture evenly into the bottom of the prepared baking dish.
4. Spread the mashed potatoes on top of the meat mixture. If using cold mashed potatoes, warm them slightly for easier spreading.
5. Sprinkle cheddar cheese generously over the mashed potato layer.
6. Bake uncovered for 35 to 40 minutes, until the meat is cooked through and cheese is bubbly and golden.
7. Let rest for 5 minutes before slicing and serving.
Notes
Use leftover mashed potatoes to save time.
Add mozzarella or pepper jack cheese for extra flavor.
Let the casserole rest before slicing to help it hold together.
