Ingredients
1 lb chicken breast
1 tbsp olive oil
3 cloves garlic minced
3 cups chicken broth
1 cup heavy cream
12 oz pasta fettuccine or any shape
1 cup parmesan cheese grated
1 cup mozzarella cheese shredded
1 tsp salt
½ tsp black pepper
1 tbsp parsley chopped (optional)
Instructions
1. Heat olive oil in a large pot over medium-high heat. Add diced chicken breast, season with salt and pepper, and sauté until golden and cooked through. Remove and set aside.
2. In the same pot, add a bit more olive oil if needed. Sauté minced garlic until fragrant, about 1 minute.
3. Pour in chicken broth and heavy cream. Stir to deglaze the pot and bring to a simmer.
4. Add pasta to the simmering liquid. Stir frequently to avoid sticking and cook uncovered for 10–12 minutes until pasta is al dente.
