Ingredients
12 oz rotini pasta
1 lb ground beef
1 cup sweet corn (frozen or canned, drained)
1 packet ranch seasoning mix (about 1 oz)
4 oz cream cheese
1 1/2 cups shredded cheddar cheese
1/2 cup milk
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Instructions
1. Cook the rotini pasta in salted boiling water until al dente. Drain and set aside.
2. In a large skillet, brown the ground beef over medium heat. Season with garlic powder, salt, and pepper. Drain excess fat.
3. Lower the heat and stir in cream cheese, ranch seasoning, and milk until smooth.
4. Add sweet corn and mix well into the sauce.
5. Stir in cooked pasta and toss everything to coat.
6. Transfer to a greased 9×13-inch baking dish and top with shredded cheddar cheese.
7. Bake at 375°F (190°C) for 15 to 20 minutes until the cheese is melted and bubbly.
8. Serve warm with optional parsley garnish or extra shredded cheese on top.

Use penne or fusilli pasta if you don’t have rotini.
