Ingredients
1 lb rigatoni pasta
2 large chicken breasts
3 cloves garlic, minced
1 cup heavy cream
2 tablespoons butter
1 tablespoon olive oil
1 cup shredded mozzarella cheese
3/4 cup grated parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped
Instructions
1. Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Drain and set aside, reserving 1/2 cup pasta water.
2. Slice chicken breasts into thin cutlets. Season with salt, pepper, and Italian seasoning.
3. Heat olive oil in a large skillet over medium-high heat. Sear chicken on both sides until golden and fully cooked. Remove and set aside.
4. In the same skillet, melt butter. Add garlic and sauté until fragrant, about 1 minute.
5. Stir in heavy cream and bring to a gentle simmer. Whisk in parmesan cheese until smooth.
6. Add rigatoni and a splash of reserved pasta water if needed. Stir in mozzarella until melted.
7. Slice chicken and nestle into the pasta. Heat everything through.
8. Garnish with parsley and extra parmesan. Serve hot.
Notes
Use bronze-cut rigatoni if possible for better sauce cling.
