Description

This Cheesy Rotel Ranch Queso recipe is the ultimate creamy, crowd-pleasing dip made with Velveeta, zesty Rotel tomatoes, and ranch seasoning. Perfect for game day, parties, or cozy nights in, it’s easy, bold, and irresistibly cheesy. Includes tips for serving, variations with meat, and more!

Ingredients

1 lb Velveeta cheese

1 can Rotel tomatoes with green chilies (10 oz)

1 packet ranch seasoning mix

1⁄4 cup milk or heavy cream

1⁄2 lb ground sausage or ground beef (optional)

2 tbsp chopped cilantro or green onions (for garnish)

Instructions

1. In a skillet over medium heat, cook ground sausage or ground beef until fully browned. Drain excess fat and set aside.

2. In a saucepan or slow cooker, add cubed Velveeta cheese and the can of Rotel (do not drain). Heat over medium-low, stirring until cheese is melted.

3. Stir in ranch seasoning mix and milk or cream. Adjust liquid to reach desired consistency.

4. Add cooked meat to the cheese mixture and stir to combine.

5. Once heated through, transfer queso to a serving dish or keep warm in a slow cooker.

6. Garnish with chopped cilantro or green onions. Serve immediately with chips or dippers of choice.

Notes

This queso is best served warm and melty.

Add extra milk or cream when reheating to maintain creaminess.

Using spicy Rotel gives it a bold kick—great for heat lovers.
