Ingredients

1 pound ground beef

1/2 cup breadcrumbs

1/4 cup milk

1 large egg

1 tablespoon Worcestershire sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup shredded cheddar cheese

3 ounces cheddar or mozzarella cheese, cut into cubes

1 tablespoon chopped parsley (optional)

Instructions

1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.

2. In a large bowl, mix ground beef, breadcrumbs, milk, egg, Worcestershire sauce, garlic powder, onion powder, salt, black pepper, and shredded cheddar until just combined.

3. Scoop about a tablespoon of the meat mixture, flatten it slightly, place a cheese cube in the center, and wrap the meat around it to form a ball.

4. Place all stuffed meatballs on the prepared baking sheet.

5. Bake for 18–20 minutes or until golden brown and cheese starts to ooze slightly.

6. Let rest for a few minutes, then garnish with parsley if desired.

7. Serve warm with ketchup or dipping sauce of your choice.

Notes

Let the bites rest after baking so the cheese sets slightly and doesn’t burn your mouth.

Use 80/20 ground beef for a juicy, tender texture.

You can prep and freeze these meatloaf bites before baking for a quick dinner later.
